Nitrite and nitrate are the key ingredients and play a multifunctional role in meat curing technology. Despite all of their desirable effects, the addition of nitrite to meat is the major cause of carcinogenic N-nitrosamines formation. In this study, the amount of residual nitrite and nitrate in meat products containing 61% to 80% meat were assessed. The samples were obtained at the fourth day of their production from Shiraz retails and analyzed using high performance liquid chromatography (HPLC). According to the results, the mean concentrations of residual nitrite and nitrate were estimated at 36.96 ± 7.38 and 85.81 ± 5.5 mg/kg in small-diameter (1.5-2 cm) sausages. Meanwhile, in large-diameter (5.5-8 cm) sausages the residues were estimated at 20.97 ± 3.28 and 124.85±5.3 mg/kg, respectively. In all analyzed samples, the residual nitrite level was found below the permitted level of 120 mg/kg which indicated the application of allowed concentrations of nitrite in such products. The mean values of residual nitrite and nitrate concentrations were statistically different (p<0.05) between small and large-diameter sausages. Although nitrate was not used in these products, detection of relatively high levels of nitrate could be originated from the ingredients of sausages such as meat, water, spices as well as vegetable or might be entered via the conversion of nitrite to nitrate during the primary stages of processing. Finally, it was concluded that HPLC is a rapid, sensitive and selective method and provides accurate results. Manuscript profile

The existence of different species of Enterococcus, which have a significant effect on the technological characteristics of cheese, particularly its flavor, has been established in milk and dairy products. This study aimed to explore some of the most significant technological features of Iranian Motal cheese-derived Enterococcus isolates with probiotic characteristics. For this, first the growth rates of Enterococcus isolates at 25, 30, 37, and 43 °C were measured, and their ability for acidification was then assessed by measuring pH and acidity by incubation at the optimal temperature for zero, 4, 8, 24, 48 and 72 hours. Subsequently, enzymatic aspects related to technological features including proteolytic and amylolytic activity as well as diacetyl production were evaluated. The results showed that the growth rates of 3TB and 7KB strains belonging to E. durans and E. faecium were greater at 30 °C and that other isolates had the maximum growth rates at 43 °C. Beginning with the fourth hour of incubation, the examined enterococci significantly decreased pH and increased acidity so that, all of the isolates were able to coagulate milk within 72 hours of incubation at the proper growth temperature, with the exception of the 3TB and 7KB strains. It was also observed that isolates 5C, 1D and 3B had all three desired technological characteristics. Overall, examined isolates, particularly the 5C, 1D, and 3B strains, can be employed as an adjunct culture for the manufacture of fermented dairy products such as various cheese types due to their appropriate technological properties. The High technologies have long been considered as one of the basic elements of production and development and have always been changing with the growth of human knowledge and has always been one of the most vital components of commercial, industrial and service organizations and a strategic factor for economic development of countries. Acquiring high technologies is a very important process for organizations that are interested in technical innovations because these types of technologies have affected the performance of the organization and play an important role in achieving the goals of the organization. Given the importance and role of technology, especially advanced technologies in creating a competitive advantage for organizations, one of the basic issues regarding such technologies is how to achieve them. This qualitative research, by adopting a management approach and analyzing the risks of acquiring technology, seeks to provide a model for achieving advanced technologies for the information technology industry using data theory. To collect information, 15 semi-structured interviews with organizational and academic experts were conducted. Sampling was theoretical sampling and was performed using targeted technique and snowball. Data analysis in the open coding process was performed with the help of MAXQDA10 software. The proposed model was obtained with a self-emergence approach and the research results are narrated. Manuscript profile

Strategic thinking studies have been developed over the past two decades mainly in two branches of psychology and management. Late researchers have proposed a hybrid approach that has led to the development of an organizational competency. To this end, the purpose of this study was to develop a process model of strategic thinking as an organizational competency and in terms of two dimensions of content and strategy for managers of Gas Company, as its content and strategic elements, based on environmental requirements and the underlying factors. This research was carried out within the framework of a qualitative approach that was explained through the Grounded Theory and coding of the meta-synthesis of elements and components of the competence of strategic thinking. To this end, data was collected using a targeted sampling method and semi-structured interviews with experts as well as a snapshot of documents. Then, concepts and effective categories were extracted through theoretical coding with a systematic approach, as well as meta-synthesis questionnaires. Consequently, a general proposition that expresses the conceptual and generalized relationships between the components of the model of competence of strategic thinking is presented. The findings showed that the content dimension (central category) of strategic thinking, which was named as insight, includes five divergent ways of thinking that aim to produce creative and effective strategic options. And thinking strategies, which include six convergent and goal-oriented ways of thinking, select effective strategic options with an analytical approach. Also, the content dimension of strategic thinking (insight) is necessary in response to environmental requirements and through thinking strategies, develops organizational capabilities in accordance with environmental requirements. The research method was applied in terms of purpose, and in terms of data analysis, it was a mixed research that was both qualitative and quantitative and in terms of method, it was a descriptive survey. The statistical population consisted of all male and female high school teachers in Tehran including 1200 students in the academic year of 1397-98, 291 of whom were selected according to Krejcie and Morgan table by simple and random stratified method. The research instrument consisted of a researcher-made questionnaire with 51 items, the validity and reliability of the questionnaire were confirmed and the data were analyzed by descriptive and inferential statistics through MAXQDA software. The results showed that the components (possessing technical knowledge of using technology, speed of technology dissemination, development of educational technologies, investment in educational technology) were among the technological factors, components (suitability of educational goals to students' needs, ability Psychological, academic and teaching abilities were identified as components of educational factors and components (appropriation of credit, ability to obtain credit and distribution of credit) were among the economic factors that influenced academic achievement of the first high school experimental science course. In addition, in the teachers' view, these factors, in line with technology and educational factors, are in a desirable situation. Also in terms of economic factors, proper credit allocation and creditworthiness, they are in desirable condition, but the appropriate credit distribution index is not currently desirable. Abstract Individual differences, especially gender and age, in the use of technology, have long been one of the basic questions in determining the factors affecting the use of technology. According to the use of different models of acceptance, among available studies, an agent role and an independent role for individual characteristics have been considered. Since the existing literature is carried out in different cognitive contexts and on a variety of technologies, there is no agreement on the modulating or independent impact of gender and age. Accordingly, this study aimed to study both roles of these changes on a sample of 335 Islamic Azad University students who were selected collaboratively and was conducted on the technology of using the Internet on mobile phones. The data was collected using the technology acceptance questionnaire of Davis (1989) which was adapted to the mobile internet technology and its validity was confirmed. Data analysis is done using a t-test and analysis of variance (to determine the different roles of changes and a linear regression test to determine the role of adjustments. The results show a stronger role of gender on the components of perceived usefulness, behavioral intention, and behavior While the independent role of age only on the component of receiving meaningful usefulness and age showed its effect concerning usefulness and intention and changing the intention of behavior using mobile internet technology. These results showed the complexity of the role of individual differences in influence in technology adoption. proposed and suggests taking both mediating and independent roles of these changes in the use of technology models in research.
