بررسی ارتباط تجمع آرسنیک با میزان پروتئین، چربی، خاکستر و رطوبت در عضله هشت گونه ماهی در ایران

در این تحقیق به بررسی ارتباط تجمع مقدار آرسنیک با میزان پروتئین، چربی، خاکستر و رطوبت عضله هشت گونه ماهی کپور معمولی، قزل آلای رنگین کمان، کپور سرگنده، کپور نقرهای، کپور علفخوار، شیر، قباد و شوریده پرداخته شد. تعداد 72 نمونه ماهی کپور معمولی، کپور سرگنده، کپور نقرهای، کپور علفخوار از مجتمع پرورش ماهی آزادگان اهواز، ماهی قزل آلای رنگین کمان از مجتمع پرورش ماهی چشمه دیمه شهرکرد و نمونههای ماهی شیر، قباد و شوریده از بندر هندیجان توسط تور گوشگیر صید شدند.آمادهسازی نمونهها بر اساس روش هضم مرطوب صورت گرفت و اندازهگیری غلظت آرسنیک با روش جذب اتمی انجام شد. نتایج این تحقیق نشان داد میانگین میزان آرسنیک در عضله ماهیان 020/0± 269/0 میلیگرم در کیلوگرم وزن مرطوب بود. بالاترین میزان عنصر آرسنیک در عضله ماهی قباد (019/0± 294/0 میلیگرم در کیلوگرم وزنتر) و پایینترین میزان این عنصر در عضله ماهی شوریده (024/0± 175/0 میلیگرم در کیلوگرم وزنتر) به دست آمد. همچنین میزان پروتئین، چربی، خاکستر در عضله ماهیان به ترتیب 78/0± 67/19، 45/0± 45/2، 23/0± 49/1 گرم در 100 گرم و میزان رطوبت 89/1± 78 درصد بود. نتایج نشان داد بین میزان تجمع آرسنیک در عضله ماهیان مورد مطالعه با میزان پروتئین، چربی، خاکستر و رطوبت همبستگی مثبت وجود دارد (05/0p<).
