بررسی آلودگی میکروبی در سبزیهای بستهبندیشده آماده مصرف مشهد

ملخص المقالة :
سبزیجات از گروههای اصلی هرم غذایی محسوب شده و مصرف آنها نقش اساسی در ارتقاء سطح سلامت افراد جامعه دارد. از طرفی امروزه ابتلا به بیماریهای میکروبی ناشی از مصرف انواع سبزی آلوده روند افزایشی پیدا کرده است. این مطالعه باهدف تعیین میزان آلودگی میکروبی سبزی های بستهبندیشده آماده مصرف در شهر مشهد انجام گرفت. در این پژوهش درمجموع تعداد200 نمونه سبزی خوردن از مناطق مختلف شهر مشهد به صورت کاملاً تصادفی جمعآوری و هر یک از نمونهها بر اساس روشهای مرجع و استاندارد ازلحاظ شمارش مزوفیل های هوازی، میزان آلودگی به کلی فرم ها، اشریشیاکولای، کپک و همچنین تخم انگل مورد آزمون قرار گرفتند. نتایج حاصل از این تحقیق نشان داد میزان آلودگی به مزوفیل های هوازی، کلی فرم ها، اشریشیاکولای،کپک و تخم انگل به ترتیب در 19، 14، 8، 13 و 5/3 درصد نمونهها بالاتر از حد مجاز بود. در مجموع 31 درصد نمونههای مورد آزمون به دلیل آلودگی میکروبی بیشازحد غیرقابلمصرف گزارش شدند. در این زمینه ارائه آموزش های لازم به تولیدکنندگان و مصرف کنندگان سبزیجات جهت رعایت قوانین بهداشتی ضروری است، ضمن آن که اعمال نظارتهای پیشگیرانه دقیقتر از جانب سازمانها و ارگانهای ذیربط نیز توصیه می شود.
