بررسی اثرات ضدمیکروبی عصارههای آبی و متانولی اسپیرولینا پلاتنسیس (Spirulina platensis) در پنیر سفید فراپالایشی

ملخص المقالة :
وجود ترکیبات مغذی در انواع پنیر، این محصول را مستعد رشد انواع میکروارگانیسمها مینماید لذا استفاده از نگهدارندهها برای حفظ کیفیت این فراورده پرمصرف شیری اجتناب ناپذیر است. در این مطالعه اثر غلظتهای 3/0 و 5/0 درصد عصارههای آبی و متانولی ریزجلبک اسپیرولینا پلاتنسیس در مهار رشد لیستریا مونوسایتوجنز، استافیلوکوکوس ارئوس و اشریشیا کولای و همچنین رشد آسپرژیلوس فلاووس در پنیر سفید فراپالایشی در مدت 60 روز دوره نگهداری در یخچال، مورد بررسی قرار گرفته است. بهعلاوه اثر عصارهها بر ویژگیهای بافت، طعم و مزه، رنگ و پذیرش کلی محصول ارزیابی شد. طبق نتایج حاصله اثر مهاری معنیدار (05/0p≤). غلظتهای 3/0 و 5/0 عصارههای آبی و متانولی روی لیستریا مونوسایتوجنز و اشریشیا کولای از روز 15ام دوره نگهداری و روی استافیلوکوکوس آرئوس از روز 30 دوره نگهداری مشاهد شد. اثر ضدباکتریایی غلظت 5/0 عصاره متانولی بطور معنیدار بیشتر از سایر تیمارها بود (05/0p≤). تمام تیمارها اثر ضدقارچی معنیدار روی پرگنه آسپرژیلوس فلاووس داشتند (05/0p≤). طبق نتایج تحقیق حاضر عصارههای مورد استفاده اثر سوء معنیدار روی ویزگیهای حسی نمونهها پنیر نداشتند هر چند غظلت 5/0 عصاره متانولی بهطور غیر معنیدار باعث کاهش کیفیت ویژگیهای حسی نمونههای پنیر گردید. در مجموع میتوان گفت که غلظتهای 3/0 و 5/0 عصاره آبی و غلظت 3/0 عصاره متانولی اسپیرولینا پلاتنسیس میتوانند بهعنوان نگهدارنده طبیعی در پنیر سفید فراپالایشی مورد استفاده قرار گیرند.
