اثر غلظت صمغ عربی و دمای خشککن پاششی بر ویژگیهای فیزیکوشیمیایی پودر آلوئهورا

ملخص المقالة :
مقدمه: آلوئهورا در بیشتر مناطق دنیا به عنوان مکمل و مادهای با ویژگیهای عملکردی، عامل ضدمیکروبی و پوشش دهنده در بسیاری از محصولات غذایی از جمله نوشیدنی، ماست، بستنی و غیره استفاده میشود. رطوبت بالای ژل آلوئهورا نگهداری و انتقال به واحدهای تولیدی را مشکل میسازد، لذا استفاده از روشهایی مانند خشککردن که ضمن حفظ کیفیت، باعث سهولت در نگهداری و حملونقل این محصول ارزشمند میشود، مورد توجه واحدهای تولیدی قرار دارد. در خشککن پاششی با پاشش ماده و معلق شدن ذرات و حذف آب بوسیله هوای داغ، محصولاتی به شکل پودر و با کیفیت بالا تولید میشوند. محصول تولید شده حاوی ذرات ریزتر و توزیع اندازه ذره ای بهتر، ظاهر، بافت، مشخصه ریزش، تراکم پذیری، دانسیته توده ای، قابلیت پراکندگی و دارای محلولیت بسیار مطلوبی در مقایسه با روشهای دیگر خشککردن میباشد. مواد و روشها: در این تحقیق به بررسی خشککردن ژل آلوئهورا در 4 دمای ورودی خشککن پاششی 135، 145، 155 و 175 درجه سلسیوس و غلظت صمغ عربی 0 % ، 5/1% و 3 % پرداخته شد. ژل آلوئهورا پس از تغلیظ خشک گردید. از بین 12 نمونه پودر تولیدی 2 نمونه که با توجه به فاکتورهای رطوبت، حلالیت و بازده عمل خشککردن مطلوبترین نتیجه را داشتند، انتخاب شده و جهت آزمونهای pH، رطوبت، خاصیت آنتیاکسیدانی، میزان آلوئین، بررسی ابعاد و شکل توسط میکروسکوپ الکترونی و رنگ ذرات با نمونههای موجود در بازار توسط آزمون فاکتوریل بر پایه طرح کاملا تصادفی در 3 تکرار و با استفاده از تجزیه واریانس یک طرفه (ANOVA) و مقایسه میانگین دانکن با سطح اطمینان 95 % مقایسه شدند. یافته ها: نمونههای تولیدی با دمای ورودی بیشتر و زمان فرآیند کمتر دارای خاصیت آنتیاکسیدانی و میزان آلوئین بیشتر بوده، نتایج بهتری را از لحاظ کیفی نشان دادند. نتیجهگیری: بررسیها نشان داد نمونه خشکشده در دمای175 درجه سلسیوس و حاوی 5/1% غلظت صمغ، مطلوبترین نمونه از جهت پارامترهای مورد مقایسه در پژوهش میباشد.
