چکیده مقاله :
ماهی شوریده دهان سیاه (Atrobucca nibe) یکی از گونه های عمقزی دریای عمان بوده و تاکنون مطالعات محدودی روی ارزش غذایی آن انجام شده است. در این تحقیق ترکیبات شیمیایی، الگوی اسیدهای چرب موجود در روغن با استفاده از کروماتوگرافی گازی و عنصر فسفر (با روش رنگسنجی) در بافت عضله این ماهی مورد مطالعه قرار گرفت. علاوه بر این، الگوی پروتئین بافت عضله به روش الکتروفورز ژل پلی آکریلامید (SDS-PAGE) انجام گردید. ترکیبات شیمیایی فیله ماهی برابر 299/0±32/79% رطوبت، 145/0±19/18% پروتئین، 032/0±01/1% چربی و 047/0±43/1% خاکستر در وزن مرطوب محاسبه شد. مقدار کل اسیدهای چرب اشباع، اسیدهای چرب تک غیراشباع و اسیدهای چرب چند غیراشباع به ترتیب 272/0±54/39%، 161/0±66/37 و 369/0±56/23% محاسبه شدند. در میان اسیدهای چرب چند غیراشباع (PUFA)، مقدار اسیدچرب DHA (345/0±43/9%) بیشتر از اسیدچرب EPA (051/0±16/1%) مشاهده شد (05/0p<). محتوای فسفر 134/0±73/260 میلیگرم در 100 گرم وزن مرطوب محاسبه شد. در آنالیز SDS-PAGE فیله ماهی، تعداد 11 باند در دامنه 10 تا 200 کیلودالتون مشخص شد که در این میان زنجیره سنگین میوزین (MHC) متراکمترین و سنگین ترین باند را به خود اختصاص داد. طبق ارزش غذایی بسیار بالا و چربی کم گوشت ماهی شوریده دهان سیاه، احتمالاً این منبع غذایی جهت تولید فرآوردههایی همچون فیله منجمد و سوریمی مناسب است.

Black mouth croaker is considered as a new and valuable resource in the deepwater of the Oman Sea. This study describes the chemical proximate composition, the fatty acid profiles of the fish oil using gas chromatography and phosphorus element (colorimetric method) of the fish muscle. Moreover, the pattern of protein using polyacrylamide gel electrophoresis (SDS-PAGE) was carried out. Proximate composition of the fillet was calculated in wet weight as follow: 79.32±0.299% moisture, 18.19±0.145% protein, 1.01±0.032% fat and 1.434±0.047% ash. The concentration of total saturated fatty acids (SFA), monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA) were measured 39.54±0.272%, 37.66±0.161% and 23.56±0.369%, respectively. Among PUFA, concentration of DHA (9.43±0.345%) was obtained more than EPA (1.16±0.051%) (p<0.05). Phosphorus content was 260.73±0.134 mg/100 wet weight. Based on SDS-PAGE, the 11 protein bands in the range of 10 to 200 kDa were detected. Myosin heavy chain (MHC) showed the most dense band. According to high nutritional value and lean-flesh of black mouth croaker, this species may be appropriate for the production of frozen fillet and surimi.
