کاربرد فناوری نانو در فرآوری، ایمنی و بستهبندی مواد غذایی

چکیده مقاله :
نانوتکنولوژی بهعنوان یک فناوری جدید و امیدوارکننده در بسیاری از زمینهها ازجمله پزشکی، کشاورزی و صنایع غذایی معرفی شده است. برای صنایع غذایی، فناوری نانو بهعنوان یک فناوری نوظهور در زمینه فرآوری، ایمنی و بستهبندی موادغذایی از اهمیت زیادی برخوردار است. بهعنوانمثال، نانوتکنولوژی در فرآوری موادغذایی برای افزایش کیفیت کلی غذا ازجمله طعم، مزه، قابلیت جذب و افزایش عمر مفید محصول کمک میکند. با افزایش زمان ماندگاری و افزایش کیفیت بستههای خوراکی با استفاده از فناوری لایه نازک، فاسد شدن موادغذایی به تأخیر میافتد. با توجه به ایمنی موادغذایی، نانوتکنولوژی برای شناسایی عوامل بیماریزا و سموم در محصولات غذایی استفاده میشود. ازنظر بستهبندی، فناوری نانو با جلوگیری از تجزیه و از بین رفتن مواد مغذی، ایمنی و درنتیجه ماندگاری طولانیتر موادغذایی را تضمین میکند. بستهبندی فعال علاوه بر محافظت در برابر شرایط محیطی، نقش مهمی در حفظ موادغذایی دارد. علاوه بر این، فناوری نانو بهطور گسترده در بستهبندی موادغذایی بهعنوان یک ضدمیکروب و برای تولید بستهبندی هوشمند استفاده میشود. بااینحال، نانوذرات ممکن است خطر سمیت بالقوهای برای سلامت انسان داشته باشند؛ بنابراین، ایجاد یک سیستم نظارتی کافی برای مدیریت خطرات بالقوه مرتبط با کاربردهای فناوری نانو توصیه میشود. سازمان همکاری و توسعه اقتصادی توصیه میکند که از دستورالعملهای تست استاندارد برای ارزیابی خطر نانومواد برای ایمنی شیمیایی استفاده شود. این بررسی، استفاده از فناوری نانو در فراوری، ایمنی و بستهبندی موادغذایی را پوشش میدهد.
Nanotechnology is a novel and promising technology that has been introduced into many fields, including medicine, agriculture, and the food industry. For the food industry, nanotechnology is of great interest as an emerging technology in the area of food processing, safety, and packaging. With regard to food safety, nanotechnology is utilized to detect pathogens and toxins in food products and to strengthen barrier properties. Nanotechnologies for packaging ensure food safety and lead to extended shelf lives, through the prevention of decomposition and nutrient loss. Apart from providing protection against environmental conditions, active packaging also plays a crucial role in preserving food. Additionally, nanotechnology is widely used in food packaging as an antimicrobial and to produce intelligent packaging. However, nanoparticles may have a potential toxicity risk to human health. Therefore, establishing an adequate regulatory system to manage the potential risks associated with nanotechnology applications is recommended. The Organization of Economic Co-operation and Development recommended the standard test guidelines be used for the hazard assessment of nanomaterials for chemical safety. This review covered nanotechnology in food safety and packaging concerns.
