Investigating the effect of replacing sugar with low-calorie sweeteners xylitol and stevia on the chemical and sensory characteristics of strawberry jam during the storage period

Abstract :

In this research, the effect of using stevia and xylitol sweeteners in the production of low-calorie strawberry jam was studied. 7 different treatments were prepared using each of the sweeteners independently or in combination. Treatments include 100% sucrose; 60% sucrose + 40% stevia; 50% sucrose + 50% stevia; 40% sucrose + 60% stevia; 50% sucrose + 50% xylitol;75% sucrose + 25% xylitol and 50% sucrose + 25% xylitol + 25% stevia. The evaluation of the treatments included the examination of the chemical and sensory characteristics, which was done on the first day of production and after 30, 60 and 90 days of storage in the form of a factorial statistical design. The results showed that the treatments containing xylitol were compared to the treatments containing stevia in all tests were more similar to the control sample and xylitol-sugar treatment (75% sucrose + 25% xylitol) despite the increase in water activity, decrease in consistency, Brix and the sensory characteristics showed the most similarity with the control sample. Also, the duration of storage in all treatments led to an increase in Brix and consistency, as well as a decrease in water activity. The pH level and the growth of mold and yeast were not affected by the type and amount of sweetener and the length of storage time. In total, the replacement of up to 25% of xylitol showed more favorability than other treatments containing xylitol, stevia and even combined treatments, which can be a suitable option in the production of low-calorie strawberry jam.
