بررسی امکان تولید دوغ کمسدیم حاوی اسانس شوید و کلریدپتاسیم

مقدمه: دوغ یک نوشیدنی لبنی ایرانی با مزایای تغذیهای مناسب است اما به علت وجود نمک کلرید سدیم در آن مصرف در افراد مبتلا به بیماری فشارخون ایجاد محدودیت میکند. از طرفی اثر ضد قارچی و ضد باکتری و عطر مطلوب اسانس شوید تایید شده است. بنابراین به منظور کمک به بیماران مبتلا به فشارخون و استفاده از مزایای سلامت بخش دوغ، محصول دوغ کمنمک با جایگزینی کلرید پتاسیم به جای کلرید سدیم و استفاده از اسانس شوید به منظور بهبود طعم و افزایش ماندگاری دوغ مطرح گردید. مواد و روشها: نمک مصرفی در فرمولاسیون دوغ با غلظتهای صفر(شاهد)، ٢۵، ۵٠، ۷۵ و۱٠٠ درصد توسط کلریدپتاسیم به تنهایی و همراه با ۳/٠ درصد اسانس شوید جایگزین گردید. بنابراین ۱٠ تیمار در قالب طرح کاملا تصادفی طراحی گردید و آزمونهای فیزیکوشیمیایی شامل اسیدیته، pH، تهنشینی و مادهخشک، آزمونهای میکروبی شامل کپک و کلیفرم و ارزیابی حسی (طعم، شوری، احساسدهانی، پذیرشکلی) در روز اول و شصتم دوره نگهداری با سه تکرار مورد ارزیابی قرار گرفت. یافتهها: نتایج حاصل از آزمونها مطابق با آزمون آنالیز واریانس یک طرفه دانکن در سطح ۹۵ درصد اطمینان مورد تجزیه و تحلیل قرار گرفت. نتایج خواص فیزیکوشیمیایی و میکروبی نشان داد جایگزینی غلظتهای کلریدپتاسیم به جای نمک سدیم اثر معنیداری بر تغییرات اسیدیته، pH، تهنشینی، مادهخشک نداشت (٠۵/٠p>). مطابق با نتایج با افزایش غلظت نمک پتاسیم به جای نمک سدیم در غلظتهای بالاتر از ۵۰ درصد در حضور ۳/٠درصد اسانس شوید خواص ارگانولپتیکی محصول به طور معنیداری (٠۵/٠p≤) کاهش یافت. نتیجهگیری: نتایج حاصل از تحقیق حاضر اثبات کرد امکان جایگزینی نمک سدیم با نمک پتاسیم تا 50 درصد در حضور ۳/٠ درصد اسانس شوید امکانپذیر است بدون اینکه اثر نامطلوبی بر خواص فیزیکوشیمیایی و میکروبی و ارگانولپتیکی محصول داشته باشد.
