1 - Evaluation of Some Physicochemical, Rheological and Textural Properties of White-Brined Cheese (Golpayegan cheese) During Ripening

Whitebrined cheese, its production and some physical, chemical, rheological and textural properties were evaluated during six months ripening in this research study. Materials and Methods: Standard methods were used to examine the influence of ripening period (at the end of each month during six months) on the characteristics of White-brined Golpayegan cheese (36 samples). The rheological and textural properties of the cheese were evaluated using a rheometer (the frequency sweep test) and a texture analyzer (the uniaxial compression test). Results: During ripening pH, total solid, protein and total nitrogen in total solid (TN/TS) of White-brined cheese were decreased while the amount of titratable acidity, fat in total solid,water soluble nitrogen in total nitrogen (WSN/TN) and non-protein nitrogen in total nitrogen (NPN/TN) were increased significantly (p< 0.05). On the basis of the small amplitude oscillatory test and the uniaxial compression test during maturation, the storage modulus (G'), loss modulus (G"), fracture stress (Qf) and firmness have been increased (p< 0.05) while the loss tangent (tanR) has been decreased (p< 0.05). The fracture strain (Sf) was kept constant (p>0.05). Conclusion: The results showed that ripening time significantly affected the physicochemical, chemical, reological and textural properties of White-brined cheese. Manuscript profile -

So, correction and revival of these works possess special worth and importance. One of this which will be introduced in this article is the manuscript of a poem named "Yusof and Zoleykha" by "Molla Mehdi Golpaygani" known as “ Shole “ who lived in second half of 12 th century. Shole was a masnavisora, who has had a special consideration to "Nezami Ganjavi" and also impressed by him ,he composed a pentameter. One of his quintuple poems is "Yusof and Zoleykha", as mentioned above containing over 4700 verses from which there are only six manuscripts. In this poem, he, before proceeding with genuine of the subject, has spoken of monotheism, creation of world , creation of human, praise of prophet and adoration of Shitte Imams in the form of mystical and religious poems. The seismic hazard analysis illustrates the nature of seismicity of the site and isevaluated according to dispersion, fault type, morphology of faults, and past earthquakes data. Here, usingtectonic maps of the site, arial and satellites photos, and the seismic data of the site, it have been tried that theseismicity of the site to be determined. Bazoft and Massan faults with 45 and 36 km length are the nearest faultsto the site. When they become active, they can provide an earth quake as big as M=7.0 and 6.9 Richters,respectively. Bazoft and Massan faults have the ability to provide the MCLs as big as 0.269g, 0.222g,respectively.According to probabilistic seismic hazard analysis in the site, for return periods of 150, 475 and 2000 years, andaccording to Bender & Perkins (1987) method, and using (Seisrisk III) software, accelerations equal to 0.261g,0.291g, and 0.310g, for the center of zone, are calculated respectively. The Shazand faultcuts and rotate the Quaternary alluvial fans, displaced Golpayegan and Khomein rivers about 4 kmand uplift the Golpayegan depression. Experts in this field examine any works of art and various texts that reflect society. Pierre Bourdieu's theory of "character and field" is one of the sociological approaches in which the various dimensions of society as a field and the institutionalization of matters following the field as a character are considered in a wide range of dimensions. This sociological approach can be reflected in literary texts with the help of interdisciplinary studies. In the present study, an attempt is made to explore the descriptive-analytical fields of the fields in Golpayegani's intoxicated poems and the characteristics that he shows in social fields in order to answer the questions that this poet according to the conditions of his society. What fields is affected and based on it, what characteristics does it reflect in its poems? The results indicate that Madhosh Golpayegani, considering the social fields of "prosperity of cultural, artistic and literary affairs", "influence of the clergy" and "progress of society", manifests various meaningful characters in his poems in the form of themes and styles. Therefore, the present study was to become the Imam Street in downtown Golpayegan of the Pedestrian-Street is based on an integrated analysis is studied. This is due to the particular situation in the city streets and commercial applications and services around their daily considerable amount of compression can be mounted and dismounted welcome, good capacity to become the Pedestrian-Street. To perform an integrated analysis of the factors influencing the street into the Pedestrian-Street interior and exterior have been extracted from authentic texts. Then the Imam in "physical-functional", "Transport and Traffic", "economy", "social", "ecological" and "management" is evaluated and the strengths, weaknesses, opportunities and future threats identified. Then, using a matrix of internal and external factors, the quantitative assessment of the situation of street is discussed. Finally, charting prioritize strategies, it was found that the conversion of Imam Street to Pedestrian-Street is located in an offensive position. This represents relative strengths and weaknesses and the opportunities and threats for conditions to become Imam Street to the Pedestrian-Street. Nevertheless, it is recommended to achieve maximum success of the plan is to adopt appropriate solutions to the weaknesses and threats. Implementation of the multi-stage plan, organize the sidewalks of downtown, remove incompatible applications from the Pedestrian-Street and strengthening of the public transport system, including the initial proposals for the Pedestrian-Street. The standard Persian Language for this research is the one which is used by speakers in national mass media. But since there is variation in different villages and area, the focus of this research is on urban area of pronunciation. The data of this study were obtained from Golpayegani-native speakers' daily conversations by the author. The data analysis showed that weakening, vowel assimilation, vowel dissimilation and metathesis are the most frequent processes. Among different kinds of weakening, spirantization and approximation are also the most frequent in this accent. Behavioral questionnaires from Likert Shuffle et al. Validate the leadership style questionnaires of Likert and Hosseini Nasab (2012) and validate the enthusiasm questionnaires of Jalali (2007) and Mir Heidari et al (2012), Hashemi Sheikh Shabani et al (2012) and Naami (2011) and reliability by Cronbach''s alpha, greater than 0.7, has been confirmed. The research method used was applied, descriptive, correlational, and investigative. The population statistics for this study are 205 hospital staff, Ayatollah Golpayegani in Qom, and 134 people selected to select the Cochran formula. The results obtained that all styles of the behavior of the work ethic of employees. That is an authoritarian-exploitative style, an authoritarian-benevolent style, a consulting style, which is effective on the desire for work. In the participatory style, all the sub-hypotheses were confirmed, so the first main hypothesis, namely the management behavior styles on the work enthusiasm of the hospital staff, Ayatollah Golpayegani in Qom, confirmed. The statistical society is 1564 from graduated students in Islamic Azad University of Golpayegan. 308 students were selected by using Cochran Formula as sample. To collect data, self-made questionnaire was used. Extracted data were analyzed by using SPSS software. Findings indicated that there is positive and meaningful relationship among information seeking behavior of students and cognition creativity, information seeking behavior and non-cognitive creativity, information seeking behavior of students and motivational dimension of creativity. Average parameters of the Friedman test shows that the cognitive dimension of creativity with an average of 2/34,Motivational dimension with 1/95And cognition, with an average of 1/71 have the highest impact on information seeking behavior of students.
