Abstract :
The Ferula genus from the family of Umbelliferae has been found to be a rich source of gum-resin (Fernch,1971). Ferula assafetida (Ferula assa-foetida L.) is a herbaceous wild plant native to Iran. In addition, thechemical composition of the essential oil of the aerial parts was determined. The major compounds were phenol,2-methyl-5-(1-methyl ethyl) (18.2 %), _.-Bisabolol (10.4%) and Arsine triethyl (8.7 %).Objective of the presentresearch work was to determine the antibacterial activity of ferula assafoetida aginest various microbial strains ofgram –positive and gram-negative bacteria.Extract was obtained using ethanol perculation method andantimicrobial activity was assessed using disc-diffussion method. The antibacterial activity was comparable withreference antibiotics. This extract inhibited the growth of gram –positive and gram-negative bacteria.Accordingto these results,it can be concluded that the extracts of Ferula asafetida have suitable antimicrobial activity andcan be used as natural preservatives in food industry.
