ملخص المقالة :
فواید سلامتبخش اسیدهای چرب چند غیراشباعی امگا-3 کم و بیش شناخته شده است. متأسفانه، در اکثر کشورها، میزان توصیه شده روزانه از این ترکیبات بهندرت برآورده میشود. بنابراین، غنیسازی غذاهای رایج و تولید غذاهای فراسودمند میتواند مصرف این اسیدهای چرب را افزایش دهد. از این نظر، تخممرغ با توجه به ارزش غذایی و قیمت مناسب هدف جالبی محسوب میشود، زیرا بخش جداییناپذیر از رژیم غذایی را تشکیل میدهد. ترکیب اسیدهای چرب امگا در تخممرغ را میتوان از طریق مکملهای جیره اصلاح کرد. بدین منظور بذور دانههای روغنی مانند کتان، کلزا، کاملینا، غنی از اسید آلفا لینولنیک و همچنین روغن ماهی، غنی از اسیدهای چرب چند غیراشباعی زنجیره بلند شامل اسید ایکوزاپنتانوئیک (EPA) و اسید دوکوزاهگزانوئیک (DHA) مورد استفاده قرار گرفتهاند. یک روند جدیدتر، استفاده از ریزجلبکها بهعنوان منبع EPA و یا DHA است. از سوی دیگر بکارگیری رهیافتهای مؤثر جهت افزایش آگاهیهای مردم در مصرف غذاهای فراسودمند ضروری بهنظر میرسد. در این مقاله، یافتههای علمی مرتبط با غنیسازی اسیدهای چرب امگا در تخممرغ بررسی و یک نمای کلی از مزایا و معایب روشهای مختلف و تأثیر مصرف تخممرغهای غنیشده بر سلامت انسان ارائه شد.
