بررسی 4 رقم گل کاغذی از نظر مواد معدنی، ویتامین ث و ظرفیت آنتیاکسیدانی

B. glabra, B. glabra "Snow White", B. specabilis "Scarlett OHara", B. buttiana "Louis Wathen) به جهت مصارف خوراکی بررسی شدند. گلهای کاغذی در مرحله گل کاملا باز از یک تولید کننده تجاری در استان گیلان-شهرستان تالش خریداری و از گلبرگها جهت تعیین درصد مواد معدنی، ویتامین C، آنتوسیانین گلبرگ و ظرفیت آنتیاکسیدانی استفاده شد. نتایج نشان داد که B. specabilis "Scarlett OHara" دارای بالاترین سطح فسفر (32.10 mg/100 g F.W.)، کلسیم (98 mg/100 g F.W.)، آهن (3.79 mg/100 g F.W.) و آنتوسیانین (31.14 mg/100 g F.W.) است. بیشترین مقدار پتاسیم بهترتیب با 81/181 و 52/181 میلیگرم در 100 گرم وزن تر برای B. glabra و "Scarlett OHara" B. specabilis و بیشترین مقدار روی (0.35 mg/100 g F.W.) برای B. glabra ثبت شد. "Snow White" B. glabra ضعیف ترین منبع از نظر روی، آهن، فسفر و آنتوسیانین بود. "Snow White" B. glabra و "Louis Wathen" buttiana B. بهترین ارقام از نظر ویتامین C و"Snow White" B. glabra و B. glabra نیز بهترین ارقام گل کاغذی از نظر ظرفیت آنتیاکسیدانی بودند. در کل مشخص شد که هر چهار رقم گل کاغذی دارای ارزش غذایی هستند اما با توجه به اینکه "Scarlett OHara"B. specabilis از نظر مواد معدنی و "Snow White"B. glabra از نظر ویتامین C و ظرفیت آنتیاکسیدانی نسبت به سایر ارقام برتری داشتند بهعنوان بهترین ارقام جهت مصرف توصیه میشوند.
