Abstract :
Abstract[1] This present study was carried out to investigate and comparison of heavy metals Ni, Cd and Zn in muscle and liver of farmed Huso huso and Acipenser stellatus from Khuozestan Province. Sixty samples of Huso huso and Acipenser stellatus were prepared from five ponds of Hantoshzadeh breeding Acipenseridae. Heavy metal levels in fish samples were analyzed by Perkin Elmer 4100 zl atomic absorption. Data analysis was performed with the software SPSS17 and comparison of the mean to T-test. The highest and lowest concentration of Ni, Cd and Zn in liver and muscle of Acipenser stellatus (P<0.05). Concentration of Ni, Cd and Zn in liver of Huso huso and Acipenser stellatus were higher than muscle (P<0.05). Concentration of this metals in muscle of Huso huso were higher than Acipenser stellatus (P>0.05). Also, concentration of metals, Ni, Cd and Zn in liver of Acipenser stellatus were higher than Huso huso (P>0.05). In this study concentration of Ni, Cd and Zn in muscle of Huso huso and Acipenser stellatus were lower than comparison of WHO, FDA, MAFF and NHMRC standards. According to the results for two species fish from Khuozestan Province does not cause allergic reactions for human consumption. * Corresponding author; a.mohamadsalehi1358@gmail.com
