This study aimed to survey biochemical carcass composition of juvenile Huso huso which fed different levels of Gingar ( zingiber officinale) extract. The fish with initial weight 15 + 0.8 g was fed of Hydroalchoholic extract of Ginger for 8 weeks. At the end of the experimental period the samples of tissue were gathered and their composition measured by standard methods. Results showed taht the most comment of protein was observed in the treatment which fed 0.5 % Gingar and the less one was observed in the treatment which fed 1 % Gingar ( p< 0.05). There were no significant differences between treatments in carcass lipid and ash contents ( p> 0.05). In conclusion, the Gingar extract, in 0.5 % dietary level, has beneficial effects on carcass composition of giant sturgeon (Huso huso).
