Effect of Dietary Protein Supplementation on Sheep Milk Coagulation Properties

The objectives of this experiment were to evaluate the effects of dietary protein supplementation in lactating dairy ewe’s diets on milk coagulation properties. Milk samples (n=126) were analyzed to assess the source of variation for rennet coagulation ability at the 6th (RCA6) and 12th hour (RCA12), milk clotting time (MCT, s) and an index of milk clotting time (IMCT, %). In addition, data were used to determine the influence of dietary protein source (sunflower meal (SFM) vs. rapeseed meal (RSM)) and lactating day (27, 35, 42, 49, 56, 63 and 70) on RCA6, RCA12 and MCT. Eighteen early lactation (4-10 weeks) dairy ewes from the synthetic Bulgarian dairy population breed (SBDP) were allocated into two isonitrogenous (crude protein (CP)=18%, dry matter (DM) basis) dietary treatments (n=9 per diet) formulated to contain equal amounts of fibre, energy, protein digestible in small intestines (PDI) and Ca:P ratio. The rates of MCT (s) were measured as time from rennet addition to onset of rennet-induced gel. RCA values were measured subjectively based on a scale of coagulum characteristics (score 1-3). Results showed a significant effect (P<0.05) of supplement (RSM vs. SFM) on RCA6 and a tendency at RCA12 (p=0.10). The influence on MCTand IMCT also showed such a tendency (p=0.11). Studied correlations between RCA6, RCA12 and MCT values todiet supplements at different lactation stages (days) showedno strong relationships, but the directions and strengths were permanent over the evaluated periods. We can conclude, that the investigated parameters (RCA6, RCA12, MCT and IMCT) were affected by dietary protein source (SFM vs. RSM) in regards to firmer coagulum (RCA6 and RCA12) and shorter MCT for milk collected from ewes fed SFM vs. RSM based diets.
هدف این آزمایش بررسی اثرات مکمل پروتئین در جیره غذایی میشهای شیرده بر خواص انعقادی شیر بودند. نمونه شیر (126N=) برای ارزیابی منبع تغییرات برای توانایی مایه انعقاد در ساعت ششم (RCA6) و ساعت دوازدهم (RCA12)، زمان لخته شدن شیر (MCT) و شاخص زمان لخته شدن شیر (IMCT) آنالیز شدند. همچنین، دادهها برای تعیین تأثیر منبع پروتئین در جیره غذایی (کنجاله آفتابگردان (SFM) در مقابل کنجاله کلزا (RSM)) و روز شیرده (27، 35، 42، 49، 56، 63 و 70) بر RCA6، RCA12 و MCT مورد استفاده قرار گرفتند. هجده گوسفند شیری در اوایل شیردهی (10-4 هفته) از جمعیت مصنوعی شیری نژاد بلغاری (SBDP) به دو گروه تیماری (9 رأس برای هر جیره) ایزونیتروژن (درصد 18=پروتئین خام، بر اساس ماده خشک (DM)) فرموله شده حاوی مقدار مساوی از فیبر، انرژی، پروتئین قابل هضم در روده کوچک (PDI) و نسبت کلسیم:فسفر اختصاص داده شد. نرخ MCT از زمان اضافه کردن مایه تا شروع ژل مایه اندازهگیری شد. ارزش RCA بر اساس مقیاس ویژگی لخته (نمره 3-1) اندازهگیری شد. نتایج اثر معنیدار (05/0P<) مکمل (RSM در مقابل SFM) در RCA6 و تمایل در 10/0P=) RCA12 نشان داد. اثر بر MCT و IMCT نیز چنین گرایشی (11/0P=) را نشان داد. همبستگی مورد مطالعه بین RCA6، RCA12 و ارزش MCT به مکمل جیره غذایی در مراحل مختلف دوره شیردهی (روز) هیچ روابط قوی را نشان نداد، اما جهت و نقاط قوت دائمی در طول دوره مورد بررسی بوده است. میتوان نتیجه گرفت که پارامترهای مورد بررسی (RCA6، RCA12، MCT و IMCT) توسط منبع پروتئین در جیره غذایی (SFM در مقابل RSM) در رابطه با لخته محکمتر (RCA6 و RCA12) و MCT کوتاهتر برای شیر جمعآوری شده از میشهای تغذیه شده با SFM مقابل RSM اثرگذار است.
