مایکوتوکسین ها یا سموم قارچی، ترکیبات آلی هستند که در انتهای فاز رشدی برخی گونههای قارچهایFusarium
spp. ،Aspergillus spp. ، Penicillium sp. در شرایط گرم و مرطوب تولید میشوند. از حدود 400 نوع مایکوتوکسین موجود، حدود 20 نوع آنها از نظر جهانی تهدیدی برای سلامت انسان و حیوانات محسوب میشوند. اکراتوکسین ها، مایکوتوکسین هایی هستند که عمدتاً به وسیله چندین گونه از قارچ هاي آسپرژیلوس شامل فلاووس، پارازیتیکوس، نومیوس، اریزئوس و پنی سیلیوم پابرکولوم و اکراتوکسین توسط آسپرژیلوس اکراسئوس تولید
می شوند. در تحقیق حاضر میزان نفوذ سموم اکراتوکسین به غلات موجود در فروشگاه هاي شهر اصفهان مورد بررسی قرار گرفت. تعداد 40 نمونه به طور تصادفی انتخاب شدند. و پس از یکنواخت کردن، در 3 مرحله استخراج، تخلیص و تعیین مقدار سموم قرار گرفتند (تعیین مقدار از طریق مقایسه سطح زیر منحنی تک تک نمونه ها و استاندارد ها با احتساب ضریب رقت انجام شد). با توجه به حضور قارچ هاي مولد آفلاتوکسین و عوامل کنترل کننده این قارچ ها در محل تولید، همبستگی مثبتی بین کاهش جمعیت قارچ هاي مولد آفلاتوکسین و عوامل کنترل کننده با کاهش میزان آفلاتوکسین دیده شد. از پتانسیل عوامل کنترل کننده می توان براي جلوگیري از آلودگی غلات به آفلاتوکسین به خوبی استفاده نمود.
Mycotoxins or fungal toxins are organic compounds that occur at the end of the growth phase of some species of Fusarium fungi. spp. Aspergillus spp. , Penicillium spp. They are produced in hot and humid conditions. Out of about 400 types of mycotoxins, about 20 of them are considered a global threat to human and animal health. Ochratoxins are mycotoxins that are mainly produced by several species of Aspergillus fungi including flavus, Parasiticus, Nomius, Eryzeus and Penicillium paberculum and Ochratoxin by Aspergillus ochraceus. In the present research, the penetration rate of Ochratoxin poisons in cereals available in the stores of Isfahan city was investigated. 40 samples were randomly selected. And after homogenization, they were placed in 3 stages of extraction, purification and determination of the amount of toxins (determination of the amount was done by comparing the area under the curve of individual samples and standards, including the dilution factor). According to the presence of aflatoxins-producing fungi and the controlling factors of these fungi in the production site, a positive correlation was seen between the decrease in the population of aflatoxins-producing fungi and the controlling factors with the decrease in the amount of aflatoxins. The potential of control agents can be used to prevent contamination of grains with aflatoxins
